Not far from Saint-Rémy-de-Provence, a tourist town known for Roman ruins and as the place where Van Gogh painted “The Starry Night,” you’ll find Domaine Hauvette.
Dominique Hauvette has been making wine in the northern foothills of Les Alpilles in Provence since 1988. The old vines are surrounded by a rocky and wild landscape planted in Limestone heavy soils have been farmed biodynamically since 2003 (organic prior to that). Grapes are handpicked, sorted in the vineyard and again in the winery, and very little is added or taken away during the winemaking process. Dominique's wines are considered some of the best in France. In 2020, La Revue du Vin de France awarded her winemaker of the year, and awarded Domaine Hauvette with 3 stars. This was achieved by being uncompromising in all aspects of viticulture and winemaking for over 3 decades.
"Hauvette was an early adopter of using concrete eggs for vinifying and aging wines in."
